Rebecca Rather's Watermelon Lemonade Sorbet Recipe

Ingredients
  • 1 c water .
  • 1 c fresh lemon juice .
  • 2 tsps unflavored gelatin .
  • 1 c Splenda granular .
  • 1/2 c fresh lime juice .
  • 4 1/2 c seeded cubed watermelons

Directions
  • Step #1 Place watermelon cubes in food processor/blender in batches; process until smooth.
  • Step #2 Pour pureed watermelon through a sieve into a 4-c measuring c.
  • Step #3 Measure 3 c watermelon juice into a large bowl; discard solids.
  • Step #4 Sprinkle top gelatin over cold water in a small saucepan; let this stand 1 min.
  • Step #5 Cook over low heat/flame, stirring until gelatin dissolves, about 2 mins.
  • Step #6 Add gelatin mixture to watermelon juice; stir in the lemon juice, & SPLENDA, lime juice, stirring until dissolved.
  • Step #7 Pour sorbet mixture into freezer container of an ice cream freezer; freeze according to manufacturers instructions.
  • Step #8 Spoon sorbet into a freezer-safe container; cover & freeze 1 hr or until firm.
  • Step #9 Dietary Exchanges Per Serving: 1/2 Starch.
