Lamb Chops With Spicy Thai Peanut Sauce Recipe

Ingredients
  • 1 tbsp soy sauce .
  • 2 tbsps peanut oil .
  • 1 tbsp green curry paste, Thai .
  • 8 lamb loin chops, 1-inch thick .
  • 1 tbsp fish sauce, Asian .
  • 1/3 c fresh cilantro leaves .
  • 2 tbsps ketchup .
  • 1 tbsp fresh lime juice .
  • 2 garlic cloves, large .
  • 1 tsp sugar .
  • 1/3 c unsalted creamy peanut butter

Directions
  • Step #1 In food processor/blender, pulse the garlic & cilantro until finely sliced.
  • Step #2 Add all other ingredients except the lamb; pulse until a paste forms.
  • Step #3 Spread 1/4 c of the paste over the chops.
  • Step #4 In a saucepan, whisk remaining paste with 1/3 c of water.
  • Step #5 Warm the sauce over low heat/flame; it should be pourable.
  • Step #6 Light a grill or preheat a grill pan.
  • Step #7 Grill the chops over a medium-high fire for 4 mins per side, or until an instant read thermometer inserted in the thickest part of a chop registers 125 to 130 degrees for medium rare.
  • Step #8 Transfer the chops to a platter.
  • Step #9 Spoon some warm peanut sauce over the lamb chops & serve, passing the extra sauce on the side.
