Potato Cakes With Creamy Mushrooms Recipe

Ingredients
  • 375 g waxy potatoes, peeled .
  • 25 g butter .
  • 1 egg, beaten .
  • Mushroom sauce .
  • 6 tbsps horseradish sauce .
  • 1/2 small onion, sliced thinly .
  • 1/2 tsp salt .
  • 1 tbsp sliced dill .
  • 15 g self raising flour .
  • 6 tbsps sour cream .
  • 375 g button mushrooms .
  • 2 tbsps sliced dill .
  • 2 shallots, sliced .
  • vegetable oil (for frying) .
  • 1 garlic clove, crushed

Directions
  • Step #1 Grate the potatoes finely & squeeze out as much water as possible.
  • Step #2 Place in a bowl with the dill, onion, salt & flour.
  • Step #3 Mix in the egg until all ingredients are mixd.
  • Step #4 Make the mushroom sauce by melting the butter & frying the garlic & shallots for 5 mins.
  • Step #5 Add the mushrooms & fry for a further 5 mins.
  • Step #6 Remove from heat & stir in the the remaining sauce ingredients, keep warm.
  • Step #7 Heat the frying oil in a pan & divide the potato mix into 8.
  • Step #8 Press the mix into cake shapes & fry for 3 - 4 mins each side.
  • Step #9 Drain the cakes & serve this with the mushroom sauce.
