Penn Cove Mussels Steamed In Orange Juice With Basil Recipe

Ingredients
  • fresh basil leaves .
  • 1 tbsp shallots, finely minced .
  • 2 tbsps olive oil .
  • 1/3 c water .
  • 16 large mussels, scrubbed & beards removed .
  • 1 pinch black pepper .
  • 2 tbsps fresh basil, finely minced .
  • 1 large navel orange

Directions
  • Step #1 Grate the orange rind & reserve.
  • Step #2 Cut 1 thin slice from the middle of the orange & cut it into little triangles; reserve.
  • Step #3 Juice the remaining orange.
  • Step #4 In a large skillet that has a lid, shallots, mussels, mix the minced basil, pepper, water, oil, orange juice & half the grated rind.
  • Step #5 Cover up the pan & bring to a boil & steam for a few mins until the mussels open.
  • Step #6 Remove the mussels with a slotted spoon & toss the ones that didn't open.
  • Step #7 Place them on plates lined with fresh basil leaves.
  • Step #8 Garnish with orange triangles.
  • Step #9 Sprinkle top the remaining orange rind on top.
  • Step #10 Pour the cooking broth into a small dishes, to dip mussels into.
