Chicken And Mushroom Chowder Recipe

Ingredients
  • 3 c chicken broth
  • 1/2 c uncooked long grain rice
  • 1 tbsp olive oil
  • 1 onion, finely sliced
  • 1 1/2 tsps dried oregano
  • 1/4 tsp pepper
  • 1 c milk
  • 1 lb cubed cooked chicken breast meat
  • 3 cloves garlic, minced
  • 1 carrot, finely sliced
  • 1/2 c water
  • 3 tbsps all-purpose flour
  • 3/4 lb mushrooms, sliced

Directions
  • Step #1 In a large saucepan, bring chicken broth & water to a boil.
  • Step #2 Stir in chicken, & season this with oregano & pepper.
  • Step #3 Add rice, & reduce heat.
  • Step #4 Heat olive oil in a medium saucepan over med-heat/flame, carrot, onion, & saute garlic, & mushrooms until tender.
  • Step #5 Thoroughly mix in the flour.
  • Step #6 Transfer to the broth mixture.
  • Step #7 Stir milk into the mixture, & continue to cook, stirring every once in awhile, until thickened, about 30 mins.
