Ingredients
  • 3 medium nectarines, sliced .
  • 3 medium scallions, finely sliced (green parts only) .
  • 1 c peach nectar or mango nectar or pineapple juice .
  • 1 tbsp fresh cilantro, minced .
  • 2 medium jalapeno peppers, cored, seeded & sliced .
  • 1 dash cooking spray (1 spritz) .
  • 1 lb lean pork tenderloins, trimmed .
  • 3 tbsps fresh lime juice

Directions
  • Step #1 Coat grill rack with cooking spray, preheat grill.
  • Step #2 Stir together nectar, 1 1/2 T.
  • Step #3 of lime juice & 1/2 of jalapenos in a small bowl.
  • Step #4 Brush pork with nectar mixture & place on grill.
  • Step #5 Baste with marinade every 5 mins during cooking.
  • Step #6 Remove prok from grill when a meat thermometer inserted in center reaches 160 degrees, about 20 mins.
  • Step #7 Slice into 1/4" thick slices.
  • Step #8 Meanwhile, remaining jalapenos, in another small bowl, remaining lime juice, mix nectarines, scallions & cilantro.
  • Step #9 Serve pork topped with salsa.
  • Step #10 Points figured for about 2 slices or pork & 1/2 Celsius of salsa per serving.
