pizza dough, of your choice enough to line a 30cm x 18cm swiss roll tin .
12 stoned black olives .
675 g red onions .
4 tbsps olive oil
Directions
Step #1 Preheat oven to 220C/425°F.
Step #2 Heat 2 tbsps of oil in a frying pan & add the thinly sliced onions.
Step #3 Stir & cover.
Step #4 Cook over a gentle heat for about 20 mins, stirring every once in awhile until onions are soft & lightly coloured.
Step #5 Cool.
Step #6 On a lightly floured surface, knead the olives & herbs into the dough & line the base of the swiss roll tin pushing up the edges to make a narrow rim around.
Step #7 Brush pizza with half the remaining olive oil.
Step #8 Spoon half the cooled onions over the base.
Step #9 Cover up with the quartered salami slices & then the remaining onions.
Step #10 Grind over lots of black pepper & drizzle the rest of the oil.
Step #11 Bake for 15 - 20 mins until crust is golden.
Step #12 Remove from oven & sprinkle with parmesan cheese.
