Blueberry-cinnamon Graham Muffins Recipe

Ingredients
  • 1 c nonfat milk .
  • 1 tbsp baking powder .
  • 3 c crumbled low-fat cinnamon graham crackers, finely crushed (about 18 sheets or 36 squares) .
  • 1/4 c sugar .
  • 2/3 c blueberries (fresh or frozen, & you don't have to unthaw them if frozen) .
  • 1 egg

Directions
  • Step #1 Preheat oven to 375.
  • Step #2 Mix graham crumbs, sugar, & baking powder in medium bowl & set aside.
  • Step #3 Beat egg & milk in separate bowl with wire whisk (or fork) until well mixed.
  • Step #4 Add egg & milk mixture to graham mixture, stir until just moistened.
  • Step #5 Gently stir in the blueberries.
  • Step #6 Spoon batter evenly into 12 greased medium muffin c, filling each c 2/3 full (mine were about 3/4 full).
  • Step #7 Bake 18 to 20 mins or until lightly browned.
  • Step #8 Let stand 5 mins in pan, then remove to wire rack & let cool slightly.
