Grilled Mahi Mahi With Jerk Spice - Michael Chiarello Recipe

Ingredients
  • For the fish .
  • 1/2 tsp ground cinnamon .
  • 1 1/2 tsps dried thyme .
  • 4 (5 oz) mahi mahi fillets .
  • 1/4 tsp ground nutmeg .
  • 2 scallions, green tops sliced .
  • 1 jalapeno, sliced .
  • salt .
  • 2 tbsps olive oil .
  • 3 tsps sea salt .
  • 1 tsp allspice .
  • For the marinade .
  • 1 red onion, roughly sliced .
  • 1 tbsp white pepper

Directions
  • Step #1 Prepare the marinade: Place all ingredients into food processor/blender & process for 15 seconds.
  • Step #2 (There will be extra marinade.
  • Step #3 Marinade can be put in the fridged for 1 week or frozen up to 2 months.
  • Step #4 ) For the fish: Spice up the fish with salt & spoon 2 tsps of the jerk marinade on each side.
  • Step #5 Place into a hot grill or grill pan & turn heat down to medium.
  • Step #6 After 2 mins (should be brown) turn over & cook 3 to 5 mins, until fish is cooked through.
