Ayam Panggang (barbecued Spicy Chicken) Recipe

Ingredients
  • 1 tbsp sugar .
  • 1/2 tsp salt .
  • 25 red chilies .
  • 10 chicken wings or 10 whole chicken legs .
  • salt & pepper .
  • 2 1/2 cm gingerroot .
  • Spice paste .
  • 4 tbsps lime juice, preferably from small round limes (limau kesturi) .
  • 10 garlic cloves .
  • 1 tbsp lime juice, preferably from small round limes (limau kesturi) .
  • 2 tbsps oil .
  • 2 tomatoes .
  • 15 shallots .
  • 2 garlic cloves .
  • 5-10 chilli padi chilies

Directions
  • Step #1 Pound or mix the garlic & ginger together, mix with lime juice & salt & rub into the chicken.
  • Step #2 -Set aside.
  • Step #3 To prepare the spice paste, shallots, put the chillies, garlic & tomatoes in a steamer & cook for 5 mins.
  • Step #4 Slit the large red chillies & discard the seeds; remove the seeds from the tomatoes.
  • Step #5 Put steamed items in a mixer & process coarsely.
  • Step #6 Heat oil in a pan & stir fry the mixed paste over low heat/flame for about 5 mins, until fragrant.
  • Step #7 Add lime juice, sugar, salt & pepper to taste.
  • Step #8 Cook the chicken over charcoal for 5 mins, turning halfway through.
  • Step #9 Rub the chicken thoroughly on both sides with the cooked spice paste & leave for 5 mins to allow the flavours to penetrate.
  • Step #10 Return chicken to the barbecue & cook this until tender & golden brown on both sides.
  • Step #11 Hint: The spice paste can be prepared several hrs in advance.
