Ingredients
1 tbsp sugar .
1/2 tsp salt .
25 red chilies .
10 chicken wings or 10 whole chicken legs .
salt & pepper .
2 1/2 cm gingerroot .
Spice paste .
4 tbsps lime juice, preferably from small round limes (limau kesturi) .
10 garlic cloves .

2 tbsps oil .
2 tomatoes .
15 shallots .
2 garlic cloves .
5-10 chilli padi chilies
Directions
Step #1 Pound or mix the garlic & ginger together, mix with lime juice & salt & rub into the chicken.
Step #2 -Set aside.
Step #3 To prepare the spice paste, shallots, put the chillies, garlic & tomatoes in a steamer & cook for 5 mins.
Step #4 Slit the large red chillies & discard the seeds; remove the seeds from the tomatoes.
Step #5 Put steamed items in a mixer & process coarsely.
Step #6 Heat oil in a pan & stir fry the mixed paste over low heat/flame for about 5 mins, until fragrant.
Step #7 Add lime juice, sugar, salt & pepper to taste.
Step #8 Cook the chicken over charcoal for 5 mins, turning halfway through.
Step #9 Rub the chicken thoroughly on both sides with the cooked spice paste & leave for 5 mins to allow the flavours to penetrate.
Step #10 Return chicken to the barbecue & cook this until tender & golden brown on both sides.
Step #11 Hint: The spice paste can be prepared several hrs in advance.
