Sweet Onion & Apple Upside Down Cake Recipe

Ingredients
  • confectioners' sugar .
  • 3/4 c brown sugar, packed .
  • 2 tbsps granulated sugar .
  • 5 oz nonfat milk .
  • 1 medium sweet onion, peeled & sliced into one inch strips (Bermuda, Maui Sweet, Walla Walla, Texas Sweets, Vidalias, Carzalia, Sweet Imperial) .
  • Batter .
  • 4 egg whites .
  • 1/2 tsp cinnamon .
  • 3/4 c granulated sugar, plus .
  • 1/3 c canola oil (extra light olive oil) .
  • 1 c all-purpose flour, sifted .
  • cooking spray, Nonfat .
  • 8 granny smith apples, peeled & sliced into 1/8-inch slices .
  • 1 1/2 tsps baking powder

Directions
  • Step #1 Preheat oven to 350 degrees.
  • Step #2 Liberally spray 2 baking sheets with nonfat cooking spray.
  • Step #3 Place onions on one baking sheet & apple slices on the other.
  • Step #4 Bake onions until caramelized, for about 1 hr.
  • Step #5 Bake apples for about 4-5 mins; remove this from oven & set aside.
  • Step #6 Heat oil in a 10-inch skillet add brown sugar & cinnamon.
  • Step #7 Stir until dissolved.
  • Step #8 Remove pan from heat, add caramelized onions & set aside.
  • Step #9 In the large bowl of an electric mixer, beat egg whites until foamy & add flour, baking powder, milk & sugar until well incorporated.
  • Step #10 Spray a 9x13-inch baking pan with nonfat cooking spray.
  • Step #11 Layer brown sugar-onion mixture in prepared pan.
  • Step #12 Place the sliced apples over the onions.
  • Step #13 Press down to fill gaps between the apples.
  • Step #14 Cover up with batter & bake about 45 mins or until center tests clean.
  • Step #15 Remove from oven & cool to about room temp.
  • Step #16 Reverse the pan onto a serving tray & lightly dust with confectioner's sugar.
