Hot Chocolatier Shots With Spicy Foam Recipe

Ingredients
  • 1 1/4 tsps vanilla extract, divided .
  • 2 (12 fluid oz) cans evaporated milk, divided .
  • 1 (10 oz) package semisweet chocolate chunks (Nestle Chocolatier dark chocolate chunks 53% Cacao (1 3/4 c) .
  • 1 c water .
  • 1/8 tsp ground cinnamon, divided .
  • 1/2 tsp ground cinnamon, divided .
  • 1/8 tsp ground cayenne pepper, divided (optional)

Directions
  • Step #1 Pour 1/2 c evaporated milk into medium mixer bowl; place beaters into mixture.
  • Step #2 Freeze for about 30 mins or until ice crystals form around edge of bowl.
  • Step #3 Heat remaining evaporated milk, stirring frequently, 1 tsp vanilla extract, chunks, water, 1/2 tsp cinnamon & a pinch of cayenne pepper in medium saucepan over low heat/flame, until melted.
  • Step #4 Do not boil.
  • Step #5 Set aside.
  • Step #6 Remove chilled evaporated milk from freezer.
  • Step #7 Beat on high speed for 1 min or until very frothy.
  • Step #8 Add remaining vanilla extract, remaining cinnamon & a pinch of cayenne pepper.
  • Step #9 Continue beating for 3 to 4 mins or until mixture forms soft peaks.
  • Step #10 Pour hot chocolate into eight 4-oz demitasse c & as soon as possible dollop with foam topping.
