Diana's School Rolls Recipe

Ingredients
  • 2 c milk .
  • 2 tsps salt .
  • 3/4 c shortening .
  • 2 c warm water .
  • 9 c flour (may need to add more) .
  • 3 tbsps yeast .
  • 3/4 c sugar

Directions
  • Step #1 Scald milk, add shortening & mix well, let cool to about room temp.
  • Step #2 Proof yeast in warm water & a pinch of sugar.
  • Step #3 Put dry ingredients in mixer, mix.
  • Step #4 Add shortening mixture, & mix using the dough hook.
  • Step #5 Mix until smooth, adding more flour as necessary to keep dough soft but not sticky.
  • Step #6 Knead by hand or mixer (following the manufacturer's instructions) until smooth.
  • Step #7 About 10 mins by hand, 2 mins with mixer.
  • Step #8 Let rise in greased bowl until doubled, about 90 mins.
  • Step #9 Don’t punch down.
  • Step #10 Shape into rolls, put in greased sheetcake pan 2 inches apart.
  • Step #11 Let rise until doubled, about 20 mins.
  • Step #12 Bake at 400F F 12-18 min or until tops are golden brown.
