Chicken Livers Stroganoff Recipe

Ingredients
  • 4 oz sliced fresh mushrooms
  • 1 (12 oz) package medium egg noodles
  • 1 1/2 c sour cream
  • 1/3 c dry sherry
  • 3 tbsps olive oil
  • 1 lb chicken livers, rinsed & trimmed
  • salt & pepper to taste
  • 1 tbsp paprika
  • 2 c sliced onion

Directions
  • Step #1 Bring a large pot of lightly salted water to a boil.
  • Step #2 Add noodles, & cook this until tender, about 8 mins.
  • Step #3 Drain, & set aside.
  • Step #4 While the noodles are getting started, heat olive oil in a large heavy skillet.
  • Step #5 Add onions, & cook, stirring until tender, about 5 mins.
  • Step #6 Add mushrooms, & continue cooking for a few mins, until starting to brown.
  • Step #7 Add the chicken livers, & season this with paprika, salt & pepper.
  • Step #8 Cook for 8 to 10 mins, until livers are nicely browned on the outside, but still slightly pink in the center.
  • Step #9 Do not over cook - the livers will become tough & leathery.
  • Step #10 Remove the skillet from the heat, & slowly whisk in the sherry, then the sour cream until well mixed.
  • Step #11 Serve over hot egg noodles.
