Whole Wheat & Flax Brownies Recipe

Ingredients
  • 3/4 c light margarine, melted .
  • 1 c pecans, sliced (optional) .
  • 1/2 tsp kosher salt .
  • 1/2 c cocoa powder .
  • 2 tbsps egg whites, room temperature .
  • 3/4 c whole wheat flour .
  • 1 1/2 c sugar .
  • 2 tsps vanilla .
  • 1/2 c egg whites, room temperature .
  • 1/2 tsp baking powder .
  • 4 tbsps flax seed meal (optional)

Directions
  • Step #1 Preheat oven to 350°F.
  • Step #2 With electric mixer, cream together margarine, sugar & vanilla.
  • Step #3 Add egg whites, a little at a time, beating well after each addition.
  • Step #4 In med.
  • Step #5 bowl, whisk together flour, cocoa, baking powder & salt.
  • Step #6 Gradually fold flour mixture into sugar mixture, mixing well.
  • Step #7 Do not overmix.
  • Step #8 Stir in pecans & flax seed meal.
  • Step #9 Note: Flax seed meal adds a rich nutty flavor.
  • Step #10 If yo don't like nuts or aren't adding pecans, use only 2 T flax seed meal.
  • Step #11 Spread batter into lightly greased 8x8" pan.
  • Step #12 Bake 40-45 mins or until brownies begin to pull away from sides of pan.
  • Step #13 Test with toothpick for doneness.
  • Step #14 Cool completely before cutting into squares.
