Peanut Butter And Jelly Monte Cristo Sandwiches Recipe

Ingredients
  • 1/4 c creamy peanut butter .
  • confectioners' sugar (to garnish) .
  • 1/4 c butter .
  • 2 eggs, lightly beaten .
  • 1/4 c strawberry jelly (or whatever you prefer) .
  • 8 slices Texas toast thick bread .
  • 1/2 c heavy whipping cream

Directions
  • Step #1 Spread 1 tbsps peanut butter on each of 4 bread slices.
  • Step #2 Spread 1 tbsps jelly on each of remaining 4 bread slices.
  • Step #3 Place peanut butter coated & jelly coated sides of bread together to form 4 sandwiches.
  • Step #4 In a small bowl, whisk together cream & eggs.
  • Step #5 In a nonstick skillet over medium-high heat on stovetop, melt 1 tbsps butter.
  • Step #6 Dip sandwich in egg mixture, & cook in skillet for 1 to 2 mins per side, or until golden brown.
  • Step #7 Repeat with remaining sandwiches.
  • Step #8 Sprinkle top with confectioner's sugar, if desired.
