Tom Yum Soup Recipe

Ingredients
  • 3 kaffir lime leaves (if you can't find leaves, substitute with zest from 3 limes) .
  • 2 tbsps fish sauce .
  • 1 stalk lemongrass .
  • 2-3 chili peppers (or use chili sauce to taste) .
  • 1 c mushrooms (oyster or straw would work well) .
  • 5 sprigs fresh cilantro .
  • 1-2 lime .
  • 4 c water

Directions
  • Step #1 Wash mushrooms & set aside.
  • Step #2 Crush lemongrass with back of knife to release flavor.
  • Step #3 Tie in a knot & drop into pot of water.
  • Step #4 Bring water to a boil.
  • Step #5 Add mushrooms.
  • Step #6 Pull kaffir lime leaves from their stems & place this in water.
  • Step #7 If using lime zest instead, add it.
  • Step #8 Turn off heat on stove.
  • Step #9 Crush chili peppers & place this into a serving bowl.
  • Step #10 This will make the dish very spicy.
  • Step #11 If you don't want as much heat, don't crush the peppers, or only crush one.
  • Step #12 (If you prefer, omit the peppers entirely & use bottled chili sauce).
  • Step #13 Add fish sauce & juice from limes into bowl.
  • Step #14 Pour lemongrass broth into serving bowl.
  • Step #15 Taste, adjust fish sauce & lime if needed.
  • Step #16 Serve, sprinkled with cilantro.
