Albanian Vegetable Pie Recipe

Ingredients
  • 30 pastry dough, leaves (Filo dough) .
  • 1 c sliced feta cheese .
  • 1 c oil, preferably olive oil .
  • 2-3 eggs .
  • 1 1/2 tsps salt .
  • 1/2 c sliced green onions .
  • 1 1/2 lbs spinach, sliced

Directions
  • Step #1 Use a medium-sized round baking pan.
  • Step #2 Brush the baking pan with some of the oil.
  • Step #3 Start laying the pastry leaves inside.
  • Step #4 First, lay two leaves, then lay two other leaves, sprinkle or brush with oil, & repeat the procedure until half of the leaves are used.
  • Step #5 Make sure that they overlap the edges of the pan by about 1 inch.
  • Step #6 Sprinkle top spinach with salt (optional), & mix well by hand.
  • Step #7 Add the feta cheese, oil, onions, eggs & salt (optional) Spread the mixture over the already laid pastry leaves.
  • Step #8 Cover up the spinach with the rest of the pastry leaves repeating the first-half procedure.
  • Step #9 Roll the hanging edges of the bottom leaves over the pie (like a pizza crust).
  • Step #10 Sprinkle top top this with oil Bake at 350°F for about 45 mins, or until golden brown.
  • Step #11 Serve hot, accompanied with buttermilk, or beaten yogurt, thinned down in cold water or with chilled stewed prunes.
