Roasted Sweet Potatoes With Cinnamon Pecan Crunch Recipe

Ingredients
  • 2 tbsps orange juice .
  • 3 lbs sweet potatoes, peeled & cut into 1-inch chunks .
  • 1/2 c firmly packed brown sugar, divided .
  • 1 c dried cranberries .
  • 1/2 tsp salt .
  • 1 1/2 tsps cinnamon, divided .
  • 4 tbsps butter, divided .
  • 1/4 c flour .
  • 2 tsps pure vanilla extract .
  • 1 c sliced pecans

Directions
  • Step #1 Preheat oven to 400°F Mix 1/4 c of the brown sugar, vanilla, orange juice, 1 tsp of the cinnamon & salt in large bowl.
  • Step #2 Add sweet potatoes & cranberries; toss to coat well.
  • Step #3 Spoon into 13x9-inch baking dish.
  • Step #4 Dot with 2 tbsps of the butter.
  • Step #5 Cover up with foil wrap.
  • Step #6 Bake 30 mins.
  • Step #7 Meanwhile, mix flour, remaining 1/4 c brown sugar & 1/2 tsp cinnamon in small bowl.
  • Step #8 Cut in remaining 2 tbsps butter with a fork until coarse crumbs form.
  • Step #9 Stir in pecans.
  • Step #10 Remove sweet potatoes from oven & stir carefully.
  • Step #11 Sprinkle top with pecan topping.
  • Step #12 Bake, uncovered, 25 to 30 mins longer or until sweet potatoes are tender & topping is lightly browned.
