Brussels Sprouts Vinaigrette Recipe

Ingredients
  • 1 tbsp mustard (deli style, spicy, yellow-your favorite) .
  • 1/4 c maple syrup .
  • 3/4 c walnuts, toasted & finely sliced (optional) .
  • 1/2 c walnut oil .
  • 4 c fresh Brussels sprouts .
  • 4 tsps sherry wine vinegar .
  • 1/2 tsp grated fresh nutmeg

Directions
  • Step #1 Wash & cut an X into the bottom of all the Brussels sprouts.
  • Step #2 Fill a large saucepan 1/4 full of water.
  • Step #3 Bring to boiling.
  • Step #4 Steam sprouts in a steamer basket until tender, but still firm, about 5-8 mins.
  • Step #5 For the vinaigrette:.
  • Step #6 In a small bowl whisk vinegar, walnut oil, mustard, maple syrup, nutmeg & salt & pepper together.
  • Step #7 Taste & adjust as necessary.
  • Step #8 Set aside.
  • Step #9 Drain the warm Brussels sprouts & place this in a serving bowl.
  • Step #10 Toss with the vinaigrette.
  • Step #11 Serve garnished with the toasted sliced walnuts.
  • Step #12 You don't have to toast the walnuts if you don't want to :).
