Kenneth's Greek Salad Recipe

Ingredients
  • Dressing .
  • 1 (10 oz) bag romaine lettuce .
  • 1/2 tsp oregano .
  • 2 tomatoes, quartered or 10 cherry tomatoes, cut in half .
  • 1-2 garlic clove, minced .
  • 2 tbsps red wine vinegar .
  • 1/8 tsp pepper .
  • 1 c feta cheese, broken into chunks (about 6 oz) .
  • 1 red onion, sliced into rings .
  • 1/2 green pepper, cored, seeded, & sliced .
  • 1/3 c olive oil .
  • 1/4 tsp salt .
  • 1 cucumber, peeled & sliced .
  • 12-16 black Greek olives

Directions
  • Step #1 Wash & prepare all vegetables.
  • Step #2 Tear lettuce into bite-size pieces & place this In a large-ish salad bowl.
  • Step #3 Add tomatoes, green pepper, cucumber, scallions, feta cheese, & olives.
  • Step #4 Prepare dressing; Whisk together all ingredients except olive oil.
  • Step #5 Slowly add the olive oil, whisking constantly Pour dressing over salad & toss.
  • Step #6 Serve on chilled salad plates.
  • Step #7 Optional-Top with Grilled & Spice uped Chicken Breast Strips.
  • Step #8 Available in the freezer section.
  • Step #9 Warm as directed on package.
