Tomato Vegetable Casserole Recipe

Ingredients
  • salt & pepper .
  • 2 large ripe tomatoes, cut crosswise into 1/4-inch thick slices .
  • 2 carrots, peeled & cut into 1/2-inch pieces .
  • 1 medium potato, peeled & cut into 1/2-inch pieces .
  • 5 tbsps olive oil .
  • 2 tbsps dried Italian seasoned breadcrumbs .
  • fresh basil sprigs, for garnish .
  • 1 red bell pepper, seeded & cut into 1/2-inch pieces .
  • 1/2 c grated parmesan cheese .
  • 1 large zucchini, cut crosswise into 1/4-inch-thick pieces .
  • 1 red onion, thinly sliced into rings .
  • 1 medium yam, peeled & cut into 1/2-inch pieces

Directions
  • Step #1 Preheat the oven to 400F degrees F.
  • Step #2 Toss the potato, bell pepper, carrots, yam, & 2 tbsps of olive oil in a 13 by 9 by 2-inch baking dish to coat.
  • Step #3 Sprinkle top with salt & pepper & toss until coated.
  • Step #4 Spread vegetables evenly over the bottom of the pan.
  • Step #5 Arrange the onion slices evenly over the vegetable mixture.
  • Step #6 Arrange the zucchini over the onion.
  • Step #7 Drizzle with 2 tbsps of oil.
  • Step #8 Sprinkle top with salt & pepper.
  • Step #9 Arrange the tomato slices over the zucchini.
  • Step #10 Stir the Parmesan & bread crumbs in a small bowl to mix.
  • Step #11 Sprinkle top the Parmesan bread crumbs over the vegetables in the baking dish.
  • Step #12 Drizzle with the last tbsp of olive oil.
  • Step #13 Bake uncovered until the vegetables are tender, & the topping is golden brown, about 40 mins.
  • Step #14 Garnish with fresh basil sprigs, if desired.
