Ingredients
  • 1 tsp baking soda .
  • 1/3 c butter or margarine, softened .
  • 2 large eggs .
  • 2 c all-purpose flour .
  • 1 c finely shredded carrots .
  • Cream Cheese Topping .
  • 2 1/4 tsps pumpkin pie spice .
  • 1/2 c firmly packed brown sugar .
  • 4 oz cream cheese .
  • 2 tsps baking powder .
  • 1/4 c granulated sugar .
  • 1 c granulated sugar .
  • 1 (15 oz) can pumpkin puree (such as Libby's brand) .
  • 1 tbsp milk .
  • 2 large egg whites

Directions
  • Step #1 Preheat oven to 350°F Grease 15 x 10-inch jelly-roll pan.
  • Step #2 Combine flour, pumpkin pie spice, baking powder & baking soda in small bowl.
  • Step #3 Beat granulated sugar, butter & brown sugar in large mixer bowl until crumbly.
  • Step #4 Add eggs, egg whites, pumpkin & carrot; beat until well mixed.
  • Step #5 Add flour mixture; mix well.
  • Step #6 Spread into prepared pan.
  • Step #7 Cream Cheese Topping:.
  • Step #8 Prepare cream cheese topping in separate bowl as follows --.
  • Step #9 Combine 4 oz softened cream cheese, 1/4 c granulated sugar & 1 tbsp milk in small mixer bowl until thoroughly mixed.
  • Step #10 Drop tspfuls of cream cheese topping over batter; swirl mixture with spoon.
  • Step #11 BAKE for 25 to 30 mins or until wooden pick inserted in center comes out clean.
  • Step #12 Cool completely in pan on wire rack.
