1-1 1/2 lb fresh Brussels sprouts (roughly all same size otherwise cut in half) .

Step #1 Wash sprouts off, peel first couple leaves off outside, cut small piece off bottoms & then lightly cut an X into the bottom of each sprout.
Step #2 Bring a pot of salted water to a boil & blanch the sprouts until they are almost done.
Step #3 Then put them into an ice bath until they are cold(this will stop the cooking process & prevent them getting mushy).
Step #4 Drain them & set aside.
Step #5 When ready for dinner, parmesan cheese, mix bread crumbs, & seasonings.
Step #6 Beat eggs in a small bowl with a little water.
Step #7 Heat a large skillet over med-heat/flame with some olive oil.
Step #8 Dunk drained sprouts in egg, then toss in the bread crumb/cheese mixture, let as much drain off as possible, pressing the crumbs lightly onto the sprouts.
Step #9 Pan cook the sprouts in the oil till golden brown & delicious.
