Bulgur Pilaf With Cumin And Chickpeas Recipe

Ingredients
  • 1 (15 oz) can chickpeas, drained .
  • 1 small onion, sliced .
  • 1 tbsp extra virgin olive oil .
  • 1 tsp cumin seeds, crushed in a mortar & pestle .
  • 1/2 tsp salt (to taste) .
  • 2-3 tbsps fresh lemon juice .
  • 1 c medium bulgur .
  • plain nonfat yogurt

Directions
  • Step #1 Place bulgur in a bowl; add the salt; stir with a spoon or mix with your hands to distribute the salt.
  • Step #2 Pour in 2 ½ c boiling water; let sit for 15-20 mins, until the bulgur is soft.
  • Step #3 Drain off any excess water through a strainer & press the bulgur in the strainer to extract more water.
  • Step #4 Heat the oil In a large-ish nonstick skillet over med-heat/flame; add in the cumin seeds.
  • Step #5 Cook, stirring, for about 1 min or just until they begin to color & smell fragrant.
  • Step #6 Stir in the onion; stir/saute about 5 mins, until tender.
  • Step #7 Stir in the bulgur & chickpeas; stir until heated through.
  • Step #8 Add in the lemon juice, if desired.
  • Step #9 Remove from heat, taste & adjust the salt; serve hot or warm, topped with yogurt.
