Potato Waffles With Blueberry Syrup Recipe

Ingredients
  • 1 tbsp cornstarch .
  • 1 1/3 c instant mashed potatoes .
  • 2 tsps baking powder .
  • 1/2 tsp salt .
  • 1 c flour .
  • Syrup .
  • 1/8 tsp cinnamon .
  • Waffles .
  • 2 eggs .
  • 2 tsps lemon juice .
  • 1 tbsp oil .
  • 1 c fresh blueberries or frozen blueberries, thawed, drained .
  • 2 1/4 c skim milk .
  • 1/2 c sugar .
  • 3/4 c water

Directions
  • Step #1 In medium saucepan, mix sugar, cornstarch & cinnamon; stir in the water & lemon juice until smooth.
  • Step #2 Over medium heat, bring to a boil, stirring constantly.
  • Step #3 Stir in blueberries; reduce heat.
  • Step #4 Simmer about 3 mins or until thickened, stirring every once in awhile.
  • Step #5 Remove from heat; set aside.
  • Step #6 Heat waffle iron.
  • Step #7 Lightly spoon flour into measuring c; level off.
  • Step #8 In large bowl, mix potato flakes, flour, baking powder & salt.
  • Step #9 Add milk, oil & eggs; stir until mixed (batter will be lumpy).
  • Step #10 Bake in hot waffle iron until steam stops & waffle is golden brown.
  • Step #11 Serve with warm blueberry syrup.
