Honey And Chili Roasted Duck Recipe

Ingredients
  • 1 tbsp cornstarch .
  • 2 tbsps orange juice .
  • 1 tsp salt .
  • 2 tsps red chili paste .
  • 3 stalks celery, sliced .
  • 1 large onion, peeled & sliced .
  • 1 (4-5 lb) whole duck .
  • 1 c dry white wine .
  • 1/2 tsp ground black pepper .
  • 1/2 c honey .
  • 1 large carrot, sliced (no need to peel) .
  • 1 tbsp Dijon mustard .
  • 1/4 c lemon juice

Directions
  • Step #1 Pre-heat oven to 375°F.
  • Step #2 Coat a shallow roasting pan, & rack, with non-stick cooking spray.
  • Step #3 In a small bowl, honey, mix the wine, lemon juice, mustard & chili paste.
  • Step #4 Set aside.
  • Step #5 Rinse the duck & cut down the center of the back, to butterfly.
  • Step #6 Pat dry.
  • Step #7 Pierce skin several times with a metal skewer.
  • Step #8 (this helps drain fat as it cooks).
  • Step #9 Spice up with some of the salt & pepper.
  • Step #10 Place the celery, onion & carrot in the bottom of the roasting pan.
  • Step #11 Place rack over the vegetables & arrange the duck on the rack, skin side up.
  • Step #12 Place in oven.
  • Step #13 After 20 mins, baste with the honey-chili mixture.
  • Step #14 Roast for a total of 1 1/2 to 2 hrs, basting every 15 mins.
  • Step #15 Remove the duck from the oven, place on a platter & keep warm.
  • Step #16 Combine the orange juice & cornstarch.
  • Step #17 Set aside.
  • Step #18 Strain the pan juices into a saucepan.
  • Step #19 Discard vegetables.
  • Step #20 Bring to a simmer, adding any leftover baste.
  • Step #21 Thicken with the cornstarch mixture & season this with salt & pepper.
  • Step #22 Cut duck into pieces (legs, thighs, breasts & wings).
  • Step #23 Serve the duck with the sauce on the side.
