Bakewell Tarts Recipe

Ingredients
  • 2 c strawberry jam .
  • 1 (18 1/4 oz) yellow cake mix .
  • 1 1/3 c water .
  • 1 (11 oz) pie crust mix, to make 2 crusts .
  • 3 eggs .
  • For dough .
  • 1/3 c cold water .
  • For cake mix .
  • 1/3 c oil

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Prepare cake mix: to the cake mix, add the water, oil & eggs & mix for 30 seconds at lowish speed to mix the ingredients.
  • Step #3 Then mix at medium speed for 2 mins.
  • Step #4 Set aside.
  • Step #5 Prepare pie crust: Combine both packets of pie crust mix with 1/3 Cup cold water until pastry forms a ball.
  • Step #6 Flatten, then roll out on lightly floured surface.
  • Step #7 Using a round cutter or glass, cut 24 rounds in crust to fit in bottom of 24 muffin tins.
  • Step #8 Place dough circles in bottom of muffin tins.
  • Step #9 Top each circle with 1 tbsps of jam.
  • Step #10 Pour cake batter over jam so that c are 3/4 full.
  • Step #11 Bake in preheated oven till cake springs back when touched, 18 to 25 min.
  • Step #12 Let cool 10 min in pans before removing to wire rack to cool completely.
