Spinach And Rice Pie Recipe

Ingredients
  • 1 1/2 c grated cheddar cheese .
  • 1 pinch salt .
  • 1/3 c grated parmesan cheese .
  • 1 bunch english spinach, trimmed & sliced .
  • 1 pinch pepper .
  • 1 1/2 c hot milk .
  • 4 eggs, lightly beaten .
  • 50 g butter .
  • 3/4 c long-grain white rice .
  • 4 spring onions, thinly sliced

Directions
  • Step #1 Steam or microwave the spinach until tender.
  • Step #2 Drain the cooked spinach well & squeeze out any excess liquid.
  • Step #3 (I have used frozen spinach to make this recipe before).
  • Step #4 Preheat oven to 190°C.
  • Step #5 Boil the rice until just tender.
  • Step #6 Then drain the rice well.
  • Step #7 Cook the sping onions in the butter until soft, using a samll frypan.
  • Step #8 Mix all of the ingredients together In a large-ish mixing bowl.
  • Step #9 Spice up with salt & pepper.
  • Step #10 Ensure the mixture is well mixed.
  • Step #11 Pour the mixture into a greased 25cm pie dish & cook in a moderate oven 190°C for approx 30 to 35 mins or until lightly browned & set.
  • Step #12 Stand the pie for ten mins before serving.
  • Step #13 Serve with a salad or vgetables.
