Sesame Crusted Shrimp With Cilantro-lime Sauce Recipe

Ingredients
  • 24 small metal skewers or wooden toothpicks (if using toothpicks, soak them in water for 30 mins before using so that they don't burn in the o) .
  • 1 tbsp soy sauce .
  • 1/2 c mayonnaise .
  • 2 tbsps sliced cilantro .
  • 24 medium uncooked shrimp, peeled & deveined (about 1 lb) .
  • 1 tbsp fresh lime juice .
  • 2 scallions, cleaned & sliced .
  • 4 tbsps white sesame seeds, toasted .
  • 2 tbsps vegetable oil .
  • 1/4 tsp salt .
  • 1 tsp light sesame oil .
  • 1/8 tsp fresh ground black pepper .
  • 1/4 tsp powdered cayenne pepper

Directions
  • Step #1 Preheat oven to 400°F.
  • Step #2 Toss the shrimp with the vegetable oil, salt, & pepper.
  • Step #3 Dip one side of each shrimp in the toasted sesame seeds.
  • Step #4 Skewer with a toothpick.
  • Step #5 When the oven is heated, place the skewered shrimp (sesame seeds on top) on a foil wrap-lined baking sheet & bake 5 to 7 mins, until the shrimp are firm to the touch.
  • Step #6 For the dipping sauce, put the remaining ingredients into bowl & mix until mixed.
  • Step #7 Spice up to taste with salt & pepper.
  • Step #8 Serve with the warm shrimp.
