40 (1 1/4 kg) green shrimp, peeled with tails intact, deveined (prawns) .
2 kaffir lime leaves, centre veins removed, finely shredded .
1 stalk lemongrass, pale section only, finely sliced .
1 tsp mustard powder .
1 tbsp palm sugar, finely sliced .
2 garlic cloves, crushed .
2 tbsps fresh lime juice .
1 mango, peeled & coarsely sliced (half only) .
250 ml peanut oil .
2 egg yolks .
1 tbsp fresh ginger, finely sliced
Directions
Step #1 To make the mango mayonnaise, egg yolks, place the mango, lime juice & mustard powder in the bowl of a food processor/blender & process until smooth.
Step #2 With the motor running, slowly add the oil in a thin steady stream, stopping every once in awhile to scrape down the side of the bowl, until mixture is pale & creamy.
Step #3 Taste & season this with salt & pepper.
Step #4 Transfer the mango mayonnaise to an airtight container & store this in the fridge until required.
Step #5 Combine the prawns, lemon grass, sugar, lime leaves, garlic & ginger In a large-ish glass or ceramic bowl.
Step #6 Cover up with plastic wrap & place this in the fridge for 3 hrs to marinate.
