Easy And Quick Vegetarian Chili Recipe

Ingredients
  • 1/2 c corn (optional) .
  • 1 tbsp olive oil .
  • 1 (1 oz) package chili seasoning mix (mild or hot) .
  • 1 (15 oz) can ranch style beans, undrained .
  • 1/2 c sliced bell peppers .
  • 1/2 c sliced onions .
  • 1 (15 oz) can tomato sauce .
  • grated cheese (optional) .
  • Optional toppings .
  • 1 (15 oz) can black beans, rinse & drain .
  • 1/2 c water (or more) .
  • sour cream (optional)

Directions
  • Step #1 Heat olive oil in a pot & cook onion & bell pepper until soft.
  • Step #2 Add all other ingredients except those for topping.
  • Step #3 Mix well.
  • Step #4 Simmer for 15 mins to an hr to mix flavors, adding water if necessary.
  • Step #5 This may also be cooked in a crockpot.
