2 c sharp cheddar cheese (pepper-jack cheese or smoked cheddar cheese) .
2 tsps McCormick's Montreal Brand steak seasoning
Directions
Step #1 Make the hash: chop all vegetables; pierce potatoes with a fork & microwave on HIGH for 5 mins; remove potatoes from microwave & cool 5 mins or until cool enough to handle.
Step #2 While potatoes are cooking, add sliced bacon to a big skillet over med-high heat; brown until crisp; remove to paper towels to drain; wipe pan & return to heat.
Step #3 Preheat broiler to high.
Step #4 Chop or wedge potatoes.
Step #5 Add olive oil to skillet you cooked the bacon in; then add potatoes.
Step #6 Cook potatoes until brown & crisp, 2 mins on each side.
Step #7 Make the salsa: mix the salsa ingredients in a small bowl; set aside.
Step #8 Back to the hash: add mushrooms to the potatoes; brown mushrooms 1 -2 mins, then add the peppers & onions; add grill seasoning, then hot sauce.
Step #9 Cook until vegetables are just tender & potatoes are cooked through, 3-5 mins longer.
Step #10 Turn off heat & add bacon back to pan; mix bacon with the vegetables then add the cheese to pan to evenly cover the mixture.
Step #11 Tent the skillet with foil wrap to carefully melt the cheese over vegetables & potatoes & to retain heat.
Step #12 Fry eggs: heat a nonstick griddle pan over med-heat/flame.
Step #13 Add 1 tbsp butter to warm pan & let it melt.
Step #14 Crack eggs onto griddle & fry to desired doneness (eggs may be cooked over easy or scrambled as well, as you like).
Step #15 Make the toast: place bread slices under broiler & toast 6 inches from heat on both sides.
Step #16 Place 2 tbsps butter in a small c with the clove of garlic & cayenne pepper; melt in microwave 30 seconds.
Step #17 Brush toast with butter mixture & sprinkle with parsley.
Step #18 Transfer vegetable/bacon hash to plates; top each portion with a single fried egg; serve this with Texas toast & serve salsa on the side.
