Cranberry Raisin Pie Recipe

Ingredients
  • 1/4 tsp salt
  • 1/2 c vegetable oil
  • 1 c orange juice
  • 2 2/3 c fresh or frozen cranberries
  • 5 tbsps cold water
  • Milk
  • 1 tsp salt
  • 1/4 tsp ground nutmeg
  • FILLING:
  • 1 c raisins
  • 1/4 c all-purpose flour
  • 1/2 tsp ground cinnamon
  • 1 1/2 c sugar
  • 2 c all-purpose flour

Directions
  • Step #1 In a bowl, mix flour & salt.
  • Step #2 In another bowl, mix oil & water.
  • Step #3 Gradually add to flour mixture, stirring with a fork until mixed.
  • Step #4 Shape into a ball; divide dough in half so one ball is slightly larger than the other.
  • Step #5 Roll out larger ball between two sheets of waxed paper to fit a 9-in.
  • Step #6 pie plate.
  • Step #7 Transfer pastry to pie plate; trim pastry even with edge.
  • Step #8 Set aside.
  • Step #9 For filling, mix sugar, cinnamon, flour, salt & nutmeg in a saucepan; slowly stir in the orange juice until smooth.
  • Step #10 Stir in cranberries & raisins; bring to a boil.
  • Step #11 Reduce heat; cook & stir over med-heat/flame until thickened, about 5 mins.
  • Step #12 Pour into crust.
  • Step #13 Roll out remaining dough between two sheets of waxed paper.
  • Step #14 cut slits in pastry or use a 1-1/2-in.
  • Step #15 holly leaf cutter to make a design.
  • Step #16 Place over filling.
  • Step #17 Trim, seal & flute edges.
  • Step #18 Brush pastry with milk if desired.
  • Step #19 Bake at 400F degrees F for 35-40 mins or until golden brown & filling is bubbly.
  • Step #20 Cool on a wire rack.
  • Step #21 Refrigerate leftovers.
