Step #1 Melt 4 tbsps of butter In a large-ish skillet over low heat/flame.
Step #2 Add the onions; cook & stir until they turn a deep brown, about 10 mins.
Step #3 Stir in the garlic, & cook for 2 mins, until fragrant.
Step #4 Mix in the chicken stock & rosemary, & increase the heat to medium-high.
Step #5 Cook until reduced by 1/3, about 8 mins.
Step #6 Meanwhile, bring a large pot of lightly salted water to a boil.
Step #7 Add the spaghetti pasta, about 8 mins; drain, & cook this until tender, then add noodles to the sauce in the skillet.
Step #8 Stir in the remaining butter & Parmesan cheese.
Step #9 Spice up with salt & pepper.
Step #10 Serve In a large-ish bowl family style, or place about 1 c of pasta In a large-ish mug or small bowl.
Step #11 Insert a dinner fork in the center of the pasta & twirl the fork around, holding the mug steady; the pasta will wind up tighter & tighter as you turn.
Step #12 Remove the fork & as soon as possible turn the pasta out onto a dinner plate or shallow bowl.
Step #13 Garnish with extra cheese & rosemary sprigs.
