Step #3 Put the spinach In a large-ish pot with no extra water (the water clinging to the leaves from rinsing will be enough), & cover & steam it over med-heat/flame for about 10 mins, stirring every once in awhile.
Step #4 Drain the spinach in a colander.
Step #5 While it’s cooling, heat the olive oil in a skillet.
Step #6 Add the red & green onions & sauté until tender – about 10 mins.
Step #7 Remove from heat.
Step #8 Squeeze the excess water out of the spinach leaves, chop them coarsely (if you have kitchen shears, you can cut up the spinach right in the colander), & put the spinach in a mixing bowl.
