Chilli Plum Crabs Recipe

Ingredients
  • 6 medium live blue crabs, uncooked (about 4 1/2 kilo) .
  • 1 tbsp chili sauce .
  • 1/2 tsp sesame oil .
  • 125 ml plum sauce (1/2 c) .
  • 2 tbsps oyster sauce .
  • 1 tbsp light soy sauce .
  • 1 garlic clove, crushed .
  • 1 tbsp fresh ginger, grated .
  • 2 tbsps peanut oil .
  • 125 ml sweet chili sauce (1/2 c)

Directions
  • Step #1 Hold crabs firmly.
  • Step #2 Slide a sharp, strong knife under the top of the shell at the back, lever off the shell.
  • Step #3 Remove & discard the whitish gills.
  • Step #4 Rinse well under cold water.
  • Step #5 Crack nippers slightly & cut crabs in half.
  • Step #6 In a large bowl, mix crabs with remaining ingredients, cover & put in the fridge for at least 20 mins.
  • Step #7 Cook undrained crabs on heated oiled BBQ, uncovered, until changed in colour, turning every once in awhile.
