Healthy Pumpkin Pancakes Recipe

Ingredients
  • 2 c whole wheat flour (I use whole wheat white flour) .
  • 1/2 tsp allspice .
  • 2 tbsps brown sugar (I use Splenda Brown sugar baking mix) .
  • 1 tsp vanilla .
  • 2 c nonfat milk .
  • 3 tbsps olive oil (so much better for you & doesn't affect the flavor) .
  • 1 c canned pumpkin .
  • 1/2 tsp salt .
  • 1 tsp cinnamon .
  • 1/2 tsp ginger .
  • 2 1/2 tsps baking powder

Directions
  • Step #1 Mix all the dry ingredients well.
  • Step #2 Mix all the wet ingredients in with the dry ingredients until there are no clumps.
  • Step #3 Cook on medium heat until the edges look dry, then flip.
  • Step #4 Remember, these pancakes will be dense & thick.
  • Step #5 This is how they are supposed to turn out.
