Mignon's Peta Bread / Pocket Bread Recipe

Ingredients
  • 1 1/4 oz dry yeast .
  • 2 tsps salt .
  • 2 c water, very warm .
  • 5-6 c unsifted flour .
  • 1 tbsp sugar

Directions
  • Step #1 In a large bowl throughly mix 2 c flour, sugar, salt & yeast.
  • Step #2 Gradually add the water & beat for 2 mins at medium speed.
  • Step #3 Add 1 c flour & beat on high speed for 2 mins.
  • Step #4 Stir in enough flour to make soft dough.
  • Step #5 Kneed the dough on high for 8 min.
  • Step #6 Place in a greased bowl, turn & raise for an hr.
  • Step #7 Punch the dough down & put on a flour covered board & rest for 30 min.
  • Step #8 Divide into 8 pieces.
  • Step #9 Roll each one into a 6 inch circle.
  • Step #10 Bake for 5 mins in a 450-500 degree oven on lowest shelf.
  • Step #11 Broil for 1-2 min on the top shelf until desired brown on top.
  • Step #12 Cut them while they are still hot - either into a pocket or in half.
