Chef Joey's Chicken And Mushroom Scallopini For Two Recipe

Ingredients
  • salt & pepper (to taste) .
  • 2 tbsps olive oil (extra virgin is best) .
  • 1 c coffee creamer (Plain Silk soy is the best) .
  • 3/4 c stock (chicken or veggie is good) .
  • 6 mushrooms (sliced medium) .
  • 2 shallots (sliced fine) .
  • 2 tbsps margarine (Vegan Earth Balance) .
  • 1/4 c marsala wine (this is a sweet wine) .
  • 2 boneless skinless chicken breasts

Directions
  • Step #1 Put the chicken breasts between saran wrap & lb each one to 1/8-1/4" thick.
  • Step #2 Heat 1 tbsps margarine & 1 tbsps olive oil in a skillet or fry pan in med-low.
  • Step #3 Add the mushrooms & saute until just tender.
  • Step #4 Don't over cook! Remove from the pan & set aside.
  • Step #5 Heat remaining margarine & olive oil in the same skillet & saute the chicken breasts until a golden brown on either side.
  • Step #6 Remove from the pan & set aside.
  • Step #7 To the skillet now add the shallots & saute until tender.
  • Step #8 Add the stock & marsala wine & remove the brown bits from the bottom of the skillet.
  • Step #9 Reduce by about 1/3.
  • Step #10 Add the creamer, salt & pepper.
  • Step #11 Taste to see if you added enough salt & pepper.
  • Step #12 Then add the chicken & mushrooms back into the skillet & reheat.
