Glazed Carrots With Moscatel Vinegar Recipe

Ingredients
  • 1 lb carrots (peeled & cut into matchsticks or coins) .
  • 1 1/2 tbsps unsalted butter .
  • kosher salt .
  • 1/4 tsp cumin seeds .
  • 2 1/2 tsps moscatel vinegar (to taste) .
  • 2 tsps minced Italian parsley

Directions
  • Step #1 Toast cumin seeds in a small dry skillet until they become fragrant & begin to darken.
  • Step #2 Allow to cool.
  • Step #3 When cool, lb them with a mortar & pestle until they make a powder.
  • Step #4 In a medium skillet over medium-low heat, melt the butter.
  • Step #5 Add carrots, cumin & salt to taste.
  • Step #6 Toss to mix ingredients.
  • Step #7 Cover up & cook approximately 10 mins or until carrots are tender.
  • Step #8 Remove the cover & raise heat to medium.
  • Step #9 Cook, shaking the skillet frequently, until the carrots have a glazed appearance & are just beginning to color in spots.
  • Step #10 Add the parsley.
  • Step #11 Remove the skillet from the heat & splash the carrots with the Moscatel vinegar.
  • Step #12 Toss well & taste; add more vinegar or salt if desired, then transfer carrots to a serving bowl.
