Stuffed Aubergines Recipe

Ingredients
  • 1 tbsp fresh basil, torn .
  • 8 basil leaves (to garnish) .
  • 2 tbsps parmesan cheese, finely grated .
  • 1 onion, finely sliced .
  • 2-3 tbsps olive oil .
  • 2 tsps sun-dried tomato paste .
  • salt & freshly ground black pepper .
  • 200 g mozzarella cheese, drained & sliced into small cubes .
  • 1 large aubergine .
  • 2 tbsps capers, sliced .
  • 1 garlic clove, grated .
  • 2 tbsps fresh breadcrumbs .
  • 2 tomatoes

Directions
  • Step #1 Pre-heat the oven to gas mark 4/350F/180°C.
  • Step #2 Wipe the aubergine & trim off the stalk end.
  • Step #3 Cut it lengthways into 8 thin slices about 1/4 inch thick.
  • Step #4 When you get to the bulbous sides, chop these into small pieces & keep aside for the filling.
  • Step #5 Arrange the slices of aubergine side by side on an oiled baking tray, then brush each slice lightly with olive oil & season this with salt & pepper.
  • Step #6 Put them into the oven on a high shelf & let them roast for 15 mins, till they have softened to roll them up easily.
  • Step #7 In a bowl, place the tomatoes & pour boiling water on the tomatoes & after 1 min drain & slip the skins off.
  • Step #8 Cut each tomato in half & carefully squeeze the seeds out (discard the seeds) & then roughly chop the tomatoes.
  • Step #9 Heat oil in a frying pan & fry the onion, sliced aubergine & grated garlic for about 5-10 mins till softened.
  • Step #10 Then add the sliced tomatoes, torn basil leaves & the sun-dried tomato paste & give it all a good stir & continue to cook for another 5-10 mins.
  • Step #11 Add in the capers & season this with salt & pepper giving it all a good mix.
  • Step #12 Remove the pan from the heat & let the mixture cool slightly.
  • Step #13 When the aubergine slices are cool enough to handle, spread an equal amount of the stuffing all over the slices followed by the sliced mozzarella leaving a border all round to allow expansion.
  • Step #14 Roll up the slices & put them in a greased baking dish, overlapping ends tucked underneath.
  • Step #15 Brush each roll with oil.
  • Step #16 Combine the fresh breadcrumbs & grated parmesan & sprinkle the mixture on top of the aubergine rolls.
  • Step #17 Brush the basil leaves with oil & place on top of each roll.
  • Step #18 Bake in the centre shelf of the oven for about 20-25 mins till the breadcrumbs & cheese are golden-browned & serve as soon as possible.
