Carnitas Recipe

Ingredients
  • 2 c water .
  • 1-2 tbsp adobo sauce .
  • 6 garlic cloves, peeled .
  • 3 lbs country-style boneless pork ribs .
  • 2 canned chipotle chiles, minced, plus .
  • 1/4 c dark rum .
  • 2 tsps kosher salt .
  • 1 1/2 c orange juice

Directions
  • Step #1 Cut pork ribs into thirds.
  • Step #2 Remove any large portions of fat.
  • Step #3 Combine pork plus the next five ingredients to a heavy skillet.
  • Step #4 I used a deep cast iron skillet that works great for the end product.
  • Step #5 Bring to a boil, reduce to simmer then cover for 1 ¾ hrs.
  • Step #6 Remove cover & reduce liquid by half.
  • Step #7 Add the dark rum & continue reducing until all of the liquid has evaporated, stirring every once in awhile.
  • Step #8 After the liquid is gone then the pork will start to stick.
  • Step #9 This is the good part.
  • Step #10 Continue to stir for another 10 to 15 mins.
  • Step #11 The meat will fall apart & brown.
  • Step #12 And that’s it.
  • Step #13 Carnitas.
