Ingredients
4 oz unsweetened chocolate, sliced .
4 c large marshmallows .
1 1/2 tsps pure vanilla extract .
4 large cold eggs .
2 tbsps sugar .
3/4 c white sugar .
1 1/2 c crushed graham cracker crumbs .
1 c all-purpose flour .
TOPPING .
1 pinch fine salt .
CRUST .
1/2 tsp fine salt .
1 c packed light brown sugar .
BROWNIE .
6 tbsps unsalted butter, melted .
8 tbsps unsalted butter
Directions
Step #1 Position a rack in the lower third of the oven & heat oven to 325F degrees F.
Step #2 Line an 8 by-8-inch square baking pan with foil wrap so it hangs over the edges by about 1 inch.
Step #3 For the crust: Lightly butter the foil wrap with some of the melted butter.
Step #4 Stir the rest of the butter together with the crumbs, sugar, & salt in a medium bowl.
Step #5 Press the crumb mixture evenly over the bottom of the pan.
Step #6 Bake until golden brown, about 20 mins.
Step #7 Meanwhile, make the brownie.
Step #8 Put the butter & chocolate in a medium microwave safe bowl.
Step #9 Melt in the microwave on 75 percent power for 2 mins.
Step #10 Stir, & microwave again until completely melted, about 2 mins more.
Step #11 Alternatively, put the butter & chocolate in a heatproof bowl.
Step #12 Bring a saucepan filled with 1 inch or so of water to a very slow simmer; set the bowl on the pan without touching the water.
Step #13 Stir every once in awhile until melted.
Step #14 Stir the light brown & white sugars, vanilla & salt into the melted chocolate.
Step #15 Add the eggs & beat vigorously to make a thick & glossy batter.
Step #16 Add the flour & stir until just incorporated.
Step #17 Pour batter into the prepared pan.
Step #18 Bake until the top is crispy & a toothpick inserted into the middle comes out mostly clean, with a few crumbs, about 40 to 45 mins.
Step #19 Remove from the oven & carefully position a rack about 6 inches from the broiler & preheat on low.
Step #20 Layer marshmallows across the top & toast under the broiler until golden, (keep an eye on it, it can go quick), about 2 mins.
Step #21 Cool on a rack, carefully removing the brownies from the pan using the aluminum flaps.
Step #22 Carefully separate any marshmallow from the foil wrap & fold away.
Step #23 Cut into 12 (2-inch) squares.
