Tita Aida's Mocha Cake Recipe

Ingredients
  • 1/2 tsp salt .
  • 1/3 c powdered sugar .
  • 3 tsps instant coffee .
  • 2 tsps vanilla .
  • 1 c all-purpose flour (lightly spooned into measuring c & leveled off) .
  • Cake .
  • 2 oz grated semisweet chocolate .
  • 2 tsps instant coffee .
  • 2 oz grated semisweet chocolate .
  • 1 c sugar .
  • 7 eggs .
  • 1/3 c water .
  • 2 c whipping cream .
  • 1 tsp cream of tartar .
  • Frosting

Directions
  • Step #1 Making the cake:.
  • Step #2 Preheat oven to 325.
  • Step #3 Separate egg yolk from white.
  • Step #4 Put egg white In a large-ish bowl, egg yolk in a small bowl.
  • Step #5 In the large bowl, cream of tartar, beat egg white, & salt until soft peaks form.
  • Step #6 Gradually add 1/2 c sugar - beat till stiff peaks form.
  • Step #7 Set aside.
  • Step #8 In the small bowl, beat egg yolks until thick & lemon colored; slowly add in the remaining 1/2 c sugar, then beat again.
  • Step #9 Dissolve 3 tsps instant coffee in 1/2 c water.
  • Step #10 Blend coffee mixture, flour, 2 oz.
  • Step #11 grated chocolate & 2 tsps vanilla into egg yolk mixture.
  • Step #12 Beat 1 min at lowish speed until mixed.
  • Step #13 Fold egg yolk mixture into egg white mixture.
  • Step #14 Pour into ungreased 10 inch tube pan.
  • Step #15 Bake 325F deg.
  • Step #16 for 60 mins.
  • Step #17 Cool.
  • Step #18 Making the frosting:.
  • Step #19 In a large bowl, beat whipping cream until slightly thickened.
  • Step #20 Set aside 3 tsps grated chocolate.
  • Step #21 Add remaining chocolate, coffee, & powdered sugar to whipping cream.
  • Step #22 Beat until firm peaks form but DO NOT OVERBEAT.
  • Step #23 Once cake has cooled, use a spatula to apply frosting.
  • Step #24 Sprinkle top remaining 3 tsps grated chocolate on top for garnish.
