Lettuce Tower Recipe

Ingredients
  • 3 tbsps vegetable oil .
  • 1 sweet red pepper .
  • 2 cucumbers .
  • 1 lemon, juice of .
  • lemons .
  • 250 g chicken bouillon .
  • pepper .
  • 400F g imitation crabmeat .
  • salad leaves .
  • 1 tbsp wine vinegar .
  • 1 small onion .
  • 120 g buckwheat groats (cous cous) .
  • 1 avocado .
  • salt .
  • 2 tbsps light mayonnaise .
  • 50 g dry white wine

Directions
  • Step #1 Boil the bouillon.
  • Step #2 Pour over the cous cous & mix.
  • Step #3 Cover up & cook it 1-2 mins or place this in the microwave covered for 1 min at maximum power.
  • Step #4 Keep covered for 5 mins, then remove cover, mix & let cool.
  • Step #5 Remove seeds from the cucumbers & the pepper & julienne.
  • Step #6 Reserve 1/4 of the cucumber & pepper; set to the side.
  • Step #7 Mix the remaining cucumber & pepper with the cous cous.
  • Step #8 Mix the oil & wine vinegar together; add to cous cous.
  • Step #9 Mince the onion & brown until golden in 1 table spoon of vegetable oil.
  • Step #10 Cool.
  • Step #11 Peel & pit avocado; cut into thin slices & sprinkle with lemon juice to prevent discoloration.
  • Step #12 Shred the crab meat, add the browned onion, mayonnaise, the reserved cucumber/pepper mixture, & pepper to taste; set to the side.
  • Step #13 I added salt.
  • Step #14 Tear lettuce into small pieces by hand & dress with wine vinegar & oil.
  • Step #15 To assemble the salad, cut both ends out of a can.
  • Step #16 Begin assembling of salad tower.
  • Step #17 Place bottomless can on salad plate & layer bottom layer is cous cous, followed by avocado, & crab mix.
  • Step #18 Press each layer firmly with a spoon.
  • Step #19 Carefully remove the can.
  • Step #20 Dress each plate with some larger, prettier lettuce leaves.
  • Step #21 Serve.
