Roasted Artichoke Chicken Recipe

Ingredients
  • 2-3 tbsps red wine vinegar .
  • 6-8 tbsps white wine .
  • 4 boneless chicken breasts .
  • 1 sliced red bell pepper .
  • 2-3 tbsps flour .
  • 1/4 c chicken broth .
  • 12 oz marinated artichoke hearts .
  • 8 oz sliced mushrooms .
  • 1-2 tsp minced garlic .
  • 1-2 tsp thyme

Directions
  • Step #1 Roast artichokes with juices in 450 degree oven for 15-20 min --artichokes will be starting to look crispy when done.
  • Step #2 Set aside.
  • Step #3 Coat chicken in flour & season this with garlic & thyme.
  • Step #4 Lightly brown chicken & then Saute with mushrooms & peppers until vegetables are slightly softened.
  • Step #5 Add vinegar, wine, & chicken broth & maintain a simmmer until chicken & vegetables are done.
  • Step #6 Add artichokes & juice to chicken pan & let simmer until mixd & warmed.
