Ingredients
  • 1 1/4 c white sugar .
  • 1/2 c shortening (I use butter flavor) .
  • 2 eggs .
  • 1 tsp salt .
  • 3 tsps baking powder .
  • 2 c cake flour .
  • 1 c milk .
  • 1 tsp vanilla

Directions
  • Step #1 Preheat oven to 350 degrees F.
  • Step #2 Line muffin tins with paper ccake liners.
  • Step #3 Sift together the flour, salt, baking powder,and sugar.
  • Step #4 Add the shortening & 3/4 c of the milk & beat for 2 mins.
  • Step #5 Add the remaining 1/4 c milk, the eggs & vanilla & beat for 2 mins.
  • Step #6 Pour the batter into muffin tins only filling half way up.
  • Step #7 Don't over-fill! Bake for 18 mins or until done.
