Sweet And Savory Vegetable Stuffed Chicken Recipe

Ingredients
  • 4 oz baby carrots .
  • 3 large white potatoes, cut into wedges (or 4 med) .
  • 1 tbsp butter .
  • 1 tsp salt .
  • 1 large white onion, cut in 1/4-inch slices .
  • 1/2 tsp cinnamon .
  • 1 tsp garlic powder .
  • 1 whole tomato, quartered .
  • 1 tsp lemon pepper, spice .
  • 2 tsps orange zest .
  • 1 (3-4 lb) roasting chickens .
  • 1/2 c water

Directions
  • Step #1 Wash chicken inside & out, discard or save innards.
  • Step #2 In bowl mix together cinnamon, ½ of onion slices, orange zest, tomatoe, & baby carrots.
  • Step #3 In fry pan melt butter & sauté above ingredients minus chicken until onions are golden or semi translucent.
  • Step #4 Onions should still be firm, slightly softened.
  • Step #5 Stuff chicken with sautéed veggies, place this in roasting pan.
  • Step #6 Arrange potatoe wedges around chicken.
  • Step #7 Place remaining onion slices on top of potatoes.
  • Step #8 Add ½ c water to pan.
  • Step #9 Sprinkle top salt, garlic powder & lemon pepper spice over chicken & potatoes.
  • Step #10 Place in oven, cover with foil wrap, cook 350 degrees for 75 mins.
  • Step #11 Check for doneness, time may need adjustment (see note).
  • Step #12 Take foil wrap off last 15 mins to brown skin.
  • Step #13 NOTE: I use a propane oven & propane burns higher than a gas or electric oven.
  • Step #14 I usually start checking at the 60 min time when cooking and.
