Chilean Sea Bass Provencal Recipe

Ingredients
  • 3 tbsps extra virgin olive oil .
  • 3 garlic cloves, finely sliced .
  • fresh ground pepper, to taste .
  • 1 tbsp fresh thyme .
  • 1 1/4 lbs fresh roma tomatoes, sliced (about 2 c) .
  • 1/4 tsp dry crushed red pepper .
  • 4 (8 oz) chilean sea bass fillets .
  • sea salt, to taste .
  • 2 1/2 c thinly sliced yellow onions .
  • 1/2 c sliced fresh parsley .
  • 3/4 c dry white wine

Directions
  • Step #1 Heat oven to 400F degrees.
  • Step #2 Heat the olive oil In a large-ish oven-proof skilley over medium-high heat.
  • Step #3 Add onions, 1/4 c of parsley, thyme, garlic & red pepper.
  • Step #4 Saute until onions begin to soften, about 5 mins.
  • Step #5 Stir in tomatoes & wine.
  • Step #6 Sprinkle top fish with salt & pepper.
  • Step #7 Place fish in same shillet & spoon vegetables atop fish.
  • Step #8 Bring to simmer.
  • Step #9 Cover up; bake this until fish is opaque in center, about 10-12 mins.
  • Step #10 Transfer fish to plates.
  • Step #11 Stir remaining parsley into sauce.
  • Step #12 Boil sauce until reduced slightly, about 2 mins.
  • Step #13 Spice up to taste with salt & pepper, spoon over sauce.
